Muromachi period (1333-1573)
The first sake breweries are formed. The Shogunate begins to tax sake, and home-brewing is declared illegal(because it cannot be taxed).

Edo period (1603-1868)
Brewers began to polish and pasteurize the rice. considerably increasing quality.
